One thing I can recommend which will give you more control over the camera angle and position, regardless of what you see on your recorded demo, is smoothing.

Tutorial found here play around with it. Takes a few attempts to get familiar but easy enough once you know whats up. The demo is for TF2 but it is the exact same.
